This morning had normal eggs and turkey bacon. Turkey bacon is really crispy.
For lunch we had a mushroom "burger" on lettuce topped with left over turkey bacon, left over spinach and pine nuts, cooked yellow squash.
For supper we had non-tortilla soup.

New Year
We started the new year singing our little hearts out (and our little voices gone!) I know David had a great time...I have the pictures to prove it! On Wednesday we start South Beach Diet. So I decided to blog about our progress.
January 1 - we had meatloaf, mashed potatoes and black eyed peas!
January 2 - we had lunch out to eat at Tein Jin so did not have supper.
Jan 3 - we had left overs. We had so much crap in the refridge so we cleaned it out. What did not get eaten from New Years eve, we threw away!
Jan 4 - Wednesday we start the day with eggs and Canadian bacon. For lunch we had salad and tuna with a lemon vinaigrette (Yuck!) Snack was lunch meat roll up and celery with laughing cow cheese. Dinner we had baked chicken roasted Brussels sprouts! It was delish! I know I can do this.
January 5- Breakfast- cook eggs with spinach and Canadian bacon.
Lunch - Salad with Chicken and balsamic vinaigrette Yummy!
Dinner - baked Salmon with soy sauce on top, mashed cauliflower
January 6
Breakfast - Eggs with mushrooms and spinach with Canadian Bacon
Lunch - Salad with the rest of the chicken and balsamic vinaigrette
Supper - Went out to eat at a Chinese restaurant and we had no rice nor egg rolls with Buddha's Delight with Tofu and Double Treasure. It really was not bad with no rice and egg rolls. I did have a small melt down tonight. This is really hard thinking up ideas for each meal. David has agreed to help me with this.
January 7.
Breakfast - David came up with breakfast. Eggs with Canadian bacon and sauteed mushrooms, artichoke hearts garlic and spinach. Topped it with Parmesan cheese.
Lunch- Steak green beans and spinach with pine nuts.
For dessert I am going to attempt this coffee custard. We shall see.

This was to be a slow day. We got up, drank coffee\tea. David walked into the garage and saw his tire on his bike. There was metal showing through the side wall of his front tire. There went the day and $200.00. Good thing today? I went to Freebirds for the first time. Very delish. Supper? Homemade chex mix!

Chicken Con Queso

November 11- This was delish!
Chicken Breast Con Queso
Ingredients
6 boneless, skinless chicken breast halves,
1/4 cup lime juice,
3 tablespoon vegetable oil, divided,
2 cloves garlic, minced,
1 teaspoon salt,
2 teaspoon hot pepper sauce (optional),
1 avocado, peeled and sliced,
1/2 package H-E-B Queso Quesadilla, sliced,
Directions
1 Rinse chicken breasts and pat dry.
2 Combine lime juice, 2 tablespoons oil, garlic, salt and hot pepper sauce.
3 Add chicken and marinate in the refrigerator for 20 minutes or more.
4 Drain chicken and reserve the marinade.
5 Heat a large skillet over medium heat, add 1 tablespoon of oil, then add chicken.
6 Saute for 5 minutes then turn.
7 Pour the marinade into the pan, cover tightly and cook about 5 minutes more or until chicken is done.
8 Top each chicken breast with a slice of avocado and cheese.
9 Cover tightly and steam over low heat for another minute until cheese is melted.
10 Garnish with lime slices and cilantro, if desired

Had lunch with my mom! It was her birthday!
Angelhair pasta with chicken was for supper.

ANGEL HAIR PASTA WITH CHICKEN
2 tbsp olive oil, divided
2 skinless, boneless chicken halves, cut into 1-inch cubes
1 carrot, sliced diagonally into 1/4-inch pieces
1 (10 oz pkg) frozen broccoli florets, thawed
2 cloves garlic, minced
12 ounces angel hair pasta
2/3 cup chicken broth
1 tsp dried basil
1/2 cup grated Parmesan cheese
Heat 1 tablespoon oil in a skillet over medium heat. Add chicken, cook, stirring until chicken is cooked, 5 minutes. Remove from skillet and drain on paper towels.
Heat remaining oil in same skillet. Begin to boil water for pasta. Add carrot to skillet, cook, stirring for 4 minutes. Add broccoli and garlic to skillet. Cook, stirring for 2 min.
Cook pasta as directed. Add chicken broth, basil and Parmesan to skillet. Stir to combine.
