Tilapia with jalapeno cream sauce
4 tilapia filets
1 1/2 cup heavy cream
1/3 cup Roberts Reserve Jalapeno Pepper Dip
1-2 T Adam's Reserve Garlic Peppercorn
2 cups fresh baby spinach
1 T olive oil
1. Heat over to 450 degrees, season tilapia with Garlic and Peppercorn then drizzle with olive oil.
2. In a small sauce pan, combine cream, Jalapeno Dip and parmean, simmer for 3-4 minutes.
3. Place tilapia on sprayed, foil lines baking sheet, bake 10 minutes. Remove from oven.
4. Pour olive oil in pan. Saute spinach in pan till wilted. Season with garlic and peppercorn and salt.
4. Pour sauce over fish and top with sauteed spinach

Last weekend!
We had a great time last weekend. We went to Brandi and Jeremy's for a very small party on Friday night. Laura, Mike, Brandi, Mike, Marianne, Dan, David and I. Hamburgers for dinner. THEN we sang. We recorded a SONG! It was sooo cool! Brandi on drums, Jeremy on guitar, Laura singing, Mike on keyboard, David on bongo's and me on BASS. I had never played bass before but it was SSOOO cool!!
We had so much fun! It sounds like a REAL song! I tried to upload the song but the blog would not let me!

Wonderful two weeks!
Last weekend, we had a great time singing Karaoke! We sang and ate. We had too much food! It was a great time! We plan to do it again in a couple of weeks!
Last night, went to the Brownlow's. Very low key. Ate some hamburgers, sang a little. I did not know I could play the bass. I will post the cd as soon as I get a copy. That was so cool! Brandy played drums, Jeremy on guitar, DAvid on bongo, Mike on keyboard, Laura sang and I played bass. Jeremy recorded it. Played it back and it really sounded good. It was SO fun!

Middle of the week!
Tuesday. February 2. Cold. Tired of the cold. Very busy today. Started at 8 am, 5 ARDs today and ended with a meeting after school. Very busy. I barely had time to myself today.
Reading a good book. Dead Pan by Gayle Trent. I really like the book and the author.

Sundays are my favorites
David is playing disc golf after not playing for two weeks. He decided 14 degrees was too cold to go and play last weekend. I am sure he will be playing for hours to make up for last weekend. He is actually pretty good. I guess all that practicing pays off. The funeral was yesterday. It was a celebration of life. I think that it is the way it should be. My aunt Kay is very sad. It is sad when you bury you child. David and I took a side tour on the way home so that he could take some pictures. Things that make him happy! We stopped in Wimberley for lunch at Wimberley Cafe. It was good food. I uploaded Lost Symbol to my Kindle in an area between Wimberley and Blanco where I seldom have cell phone service. I was surprised. The book is good so far!

Back to school
After a weekend of Below freezing and I mean below freezing temps, we begin another week back at school. I sometimes wish I was independently wealthy but alas, I am not. Many ARDs this week will result in a very busy week. My mother called last evening to let me know that my cousin Jay passed away. He had been sick for a long time. He was only in his 50s. It is sad time for my Auny Kay. You should not out live your kids. I wish that I could attend the funeral for my aunt but work interferes. I really do love my job. I think I am gloomy due to the cold weather that keeps us from getting the hot tub set up or anything else outside. Oh, well..to school I go. Have a great week.
